Based on an exhaustive analysis of the Paleolithic man’s diet from more than 10,000 years ago, a group of researchers came to the unequivocal conclusion that fatty acids (omega-6 and omega-3) and their relationship in the daily diet are the key to health. Back in 1956, Dr. Hugh Sinclair from the University of Oxford stated that most of the diseases of civilization (coronary disease, thrombosis, cancer, diabetes) are caused by a disorder in fat metabolism. The best adaptation of fat metabolism is achieved by consuming fatty fish, because it contains an abundance of omega-3 fatty acids (EPA, DHA). If we add the third from that group – linoleic fatty acid (for example from flaxseed /ALA/), then we have done everything for our own health.

The mark is awarded by the Croatian Institute of Public Health to those products that meet the criteria prescribed by the Institute, and which aims to further inform consumers and make it easier for them to choose healthy and high-quality foods that ensure proper nutrition.
It should be noted that the human body does not have an enzyme that breaks down the double bonds of fatty chains larger than 10 carbon atoms, which means that they must be regularly ingested with food because they cannot be created by themselves in the body. These fatty acids are key in metabolism and crucial for good health.
Among the mentioned fatty acids, DHA is particularly important. It participates in the functioning of nervous tissue, the retina and the brain, so it is crucial for the cognitive function of the brain, memorization, visual discrimination, etc.
It is also important to emphasize that omega-3 fatty acids are crucial for cell membranes – if there is not enough of them in supply, all cells, and thus tissues and organs, suffer.
Apart from being very tasty, from a nutritional point of view, carp meat is a very good choice. Dishes prepared with carp have their own nutritional value, especially because carp meat is rich in proteins, which contain valuable amino acids.
Freshwater fish meat is a good source of vitamins (A, E and B groups) and minerals (potassium, phosphorus), and contains trace elements, e.g. molybdenum, selenium and cobalt, which are important for the normal functioning of the body.
Vitamins A and E belong to natural antioxidants. Vitamin A is important for vision, healthy skin, hair and mucous membranes, and vitamin E for the functioning of the immune and endocrine systems, protection against atherosclerosis, wound healing, and can reduce the risk of heart disease and prevent premature aging of the skin.Vitamins of the B group work to stimulate metabolism, growth and division of cells and improve the functioning of the immune and nervous systems. By working together, they can suppress stress, depression, heart and blood vessel diseases.
Potassium and phosphorus play an important role in the body. Potassium regulates the pH level, on which many other bodily functions depend, such as blood pressure, and is also necessary in the metabolism of proteins and carbohydrates.
Phosphorus, the second most abundant mineral in the body, is important for bone formation and health. It stimulates muscle contraction and contributes to tissue growth and regeneration, energy production, transmission of nerve impulses, and heart and kidney function.
